This Balsamic Baked Chicken Breast with Mozzarella Cheese is a juicy, flavorful, and easy-to-make dinner option. The chicken breasts are marinated and baked with a tangy balsamic glaze, garlic, and herbs, then topped with melty mozzarella cheese and fresh cherry tomatoes. Perfect for a simple weeknight meal or a family gathering, this Italian-inspired dish combines vibrant flavors and a comforting cheesy finish.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Balsamic Glaze

  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced

Toppings

  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken.
  2. Prepare Chicken: Season the chicken breasts generously with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat.
  3. Sear Chicken: Sear the chicken breasts in the hot olive oil for 2-3 minutes on each side until they develop a golden crust but are not fully cooked through. This step locks in juices and enhances flavor.
  4. Make Balsamic Glaze: In a small bowl, whisk together balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic until well combined.
  5. Assemble in Baking Dish: Place the seared chicken breasts in a baking dish. Pour the balsamic glaze evenly over the chicken, making sure each piece is well coated.
  6. Add Toppings: Scatter halved cherry tomatoes around and on top of the chicken breasts. Then sprinkle shredded mozzarella cheese evenly over each piece.
  7. Bake: Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven and garnish with fresh basil or parsley if desired. Serve hot, spooning extra balsamic glaze and tomatoes over the chicken for added flavor.

Notes

  • For best results, use chicken breasts of even thickness or pound them to ensure even cooking.
  • If you prefer a thicker glaze, reduce the balsamic vinegar and honey mixture in a saucepan before pouring over chicken.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • This recipe pairs well with a side of roasted vegetables, garlic bread, or a fresh green salad.
  • To make it dairy-free, omit the mozzarella cheese or substitute with a vegan cheese alternative.
