Ingredients

For the Chicken:

  • 6 boneless, skinless chicken breasts, cut into thirds
  • Buttermilk

For the Coating:

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon seasoned salt (such as Lawry’s)
  • 3/4 teaspoon black pepper
  • 2 teaspoons paprika
  • 1/4 cup (1/2 stick) butter

Instructions

  1. Marinate the Chicken: Place the chicken strips in a bowl of buttermilk. Cover and refrigerate for 20–30 minutes.
  2. Preheat the Oven: Preheat the oven to 400°F (200°C).
  3. Prepare the Coating: In a large resealable plastic bag or mixing bowl, combine the flour, salt, seasoned salt, pepper, and paprika. Mix thoroughly.
  4. Melt the Butter: Cut the butter into pieces and place in a 9×13-inch baking pan. Put the pan in the oven to melt the butter.
  5. Coat the Chicken: Remove the chicken from the buttermilk, letting the excess drip off. Coat each piece thoroughly in the flour mixture.
  6. Bake the Chicken: Arrange the coated chicken pieces in the prepared pan. Bake for 20 minutes, then turn each piece over. Bake for another 20 minutes, or until the internal temperature reaches 170°F and the coating is crispy and golden.
