This Baked Caprese Chicken is a flavorful, easy-to-make dish featuring juicy chicken breasts topped with fresh tomatoes, melted mozzarella, fragrant basil, and a drizzle of balsamic glaze. Perfect for weeknight dinners or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella slices or pearls
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub chicken breasts with olive oil and season with minced garlic, Italian seasoning, salt, and pepper.
  3. Place chicken in a baking dish and bake for 20 minutes.
  4. Remove from oven and top each breast with halved tomatoes and mozzarella.
  5. Return to oven and bake for an additional 5–7 minutes, until cheese is melted and chicken reaches 165°F (74°C).
  6. Sprinkle fresh basil leaves on top and drizzle with balsamic glaze before serving.
