Authentic Pico de Gallo is a fresh, chunky salsa made with ripe tomatoes, onions, jalapeño, cilantro, and lime juice. This vibrant and tangy Mexican condiment is perfect for topping tacos, dipping chips, or adding brightness to any dish. Ready in just 15 minutes, it’s a simple and healthy way to enliven your meals.

Ingredients

Ingredients

  • 1 lb Roma tomatoes (34 medium), diced
  • 1/2 medium white onion (about 1 cup chopped)
  • 1 jalapeño pepper, seeded and finely minced (optional)
  • 1/2 cup cilantro, chopped
  • 2 Tbsp lime juice (from 1 lime)
  • 1/2 tsp salt (or to taste)
  • 1/8 tsp black pepper

Instructions

  1. Combine fresh vegetables. In a medium bowl, combine the diced Roma tomatoes, chopped white onion, finely minced jalapeño pepper, and chopped cilantro to create the vibrant base of your Pico de Gallo.
  2. Add lime juice and season. Stir in 2 tablespoons of fresh lime juice, then season the mixture with 1/2 teaspoon salt and 1/8 teaspoon black pepper. Adjust seasoning to taste.
  3. Serve or refrigerate. Enjoy the Pico de Gallo immediately for the freshest flavor, or cover and refrigerate for up to overnight to allow the flavors to meld beautifully.

Notes

  • For a milder salsa, omit the jalapeño or leave the seeds in for more heat.
  • Use fresh lime juice for the best flavor; bottled lime juice will alter the taste.
  • Pico de Gallo is best consumed within 1-2 days for optimal freshness.
  • Add a pinch of cumin or garlic for a unique twist if desired.
  • Perfect as a topping for tacos, grilled meats, or as a dip for tortilla chips.
