This easy Apple Coffee Cake is a fall favorite! Wonderfully buttery and moist, packed with apples and spiced with cinnamon, this coffee cake is comfort food that everyone will love! Perfect with a cup of coffee or weekend brunch.

Ingredients

Coffee Cake

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • ¾ cup brown sugar (light or dark)
  • 4 eggs, room temperature
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour, spooned and leveled
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup milk, room temperature (whole milk preferred)

Apple Mixture

  • 1½ cups apples, peeled and diced (about 2 apples, Granny Smith recommended)
  • 1½ cup brown sugar
  • 8 tablespoons unsalted butter, melted
  • ⅓ cup all-purpose flour
  • 2 teaspoons ground cinnamon or apple pie spice
  • ¼ teaspoon salt

Glaze (Optional)

  • ¾ cup powdered sugar
  • 1 to 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Coffee Cake – Preheat oven to 350°F. Grease a 9×13 baking dish. Cream butter, granulated sugar, and brown sugar. Add eggs and vanilla. In a separate bowl, mix flour, baking powder, and salt. Alternate adding flour mixture and milk to the butter mixture. Set aside.
  2. Apple Mixture – Combine apples, brown sugar, melted butter, flour, cinnamon, and salt. Set aside.
  3. Assemble – Layer half of the cake batter, then apple mixture, remaining batter, and top with remaining apple mixture. Bake for 45-55 minutes. Let cool.
  4. Glaze (Optional) – Mix powdered sugar, milk, and vanilla. Drizzle over cake. Enjoy!

Notes

  • Leftover coffee cake can be stored in an airtight container for up to 3 days at room temperature or in the refrigerator.
  • To freeze, wrap the cake in plastic wrap and then aluminum foil. Place in a freezer-safe bag for up to 3 months. Defrost before serving.
