Muffins:
2 Cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup light brown sugar
2 eggs
2 teaspoon vanilla extract
2 Granny Smith apples, 1 grated and 1 diced, 1 cup of each
Crumble Topping:
3/4 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup light brown sugar
1/2 teaspoon ground cinnamon
6 tablespoons unsalted butter, melted
Glaze:
1 cup powdered sugar
4 tablespoons milk, or heavy cream, divided
Instructions
Preheat oven: Preheat oven to 375°F (190°C). Grease a 12 cup muffin pan or line with muffin wrappers.
Prepare dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
Prepare wet ingredients: In a large bowl, beat butter, sugar, and eggs until smooth. Mix in vanilla. Combine dry ingredients with wet ingredients, then fold in apples.
Fill muffin pan: Spoon the mixture into the muffin pan, filling about 3/4 full.
Make crumble: Whisk together crumble ingredients, then sprinkle over the batter.
Bake: Bake for 20-22 minutes until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
Prepare glaze: Whisk powdered sugar and milk until smooth. Drizzle over muffins before serving.
