  • 6 large eggs
  • 1 cup whole milk (or 2% milk)
  • 2 cups shredded cheddar cheese (or cheddar-Monterey Jack blend)
  • 1 (30-ounce) bag frozen shredded hash browns, thawed
  • 1 pound beef or chicken sausage, cooked and crumbled
  • 1 small onion, finely diced
  • 1 bell pepper (any color), diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • Butter or cooking spray (for greasing the baking dish)

Instructions

  1. Layer ingredients: Spread thawed hash browns evenly in the baking dish.
  2. Top with sausage and veggies: Add cooked sausage, diced onion, and bell pepper on top of the hash browns.
  3. Add cheese: Sprinkle 1½ cups of shredded cheese over the ingredients in the dish.
  4. Prepare egg mixture: In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper until well combined.
  5. Pour egg mixture: Pour the egg mixture evenly over the layered ingredients in the baking dish.
  6. Add final cheese layer: Sprinkle the remaining ½ cup of cheese over the top of the casserole.
  7. Bake covered: Cover the dish with foil and bake for 30 minutes.
