Ingredients

  • 16 oz chocolate chip cookie dough, room temperature

Brownie Layer:

  • 36 oz brownie mix, 2 boxes, batter prepared according to package instructions

Cheesecake Layer:

  • 24 oz cream cheese, softened
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Assembly:

  • 40 double-stuffed chocolate cookie sandwiches
  • whipped cream, for serving

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (180°C). Line a 10-inch springform pan with plastic wrap. Press cookie dough into the pan.
  2. Freeze Cookie Dough: Freeze the cookie dough disk. Re-clasp the pan and spray with cooking spray. Pour in the brownie batter.
  3. Bake Brownie: Bake for 35 minutes, then cool. Reduce oven temperature.
  4. Make Cheesecake Batter: Mix cream cheese, sugar, vanilla, and egg until smooth.
  5. Assemble: Press cooked brownie up the sides. Chill. Add cookie layer, then cheesecake batter. Bake.
  6. Final Layer: Add more cookies on top, place frozen cookie dough disk, bake again.
  7. Chill and Serve: Chill, then slice and serve with whipped cream.
